Office:Mac Apple symbol missing

After applying the 12.1.1 update to office I'm unable to insert an :apple: into documents. I use it quite a bit, just wondering what I can do to get it back 🙁
 
It does, however the shortcut keys have been deleted under the "Insert > Symbol > :apple:" and I'm unable to reassign them.
