I've searched and found nothing about this issue in the Apps forums. It seems that Adium does not send me 'offline messages' that other MSNers have sent me. Instead, they sit on the MSN servers and I get them the next time I log in using the Windows Live client on a Windows box. Is this common behavior? Is there a way to disable offline messages so that people cannot send me msgs that I'll never receive???

Don't think it can. It's a feature of Windows Live Messenger 8 and I think the only way to get rid of them is to log into Windows live messenger on Windows.

Correct. If you want to check for offline messages under OS X, Mercury Messenger (with MSNP13/14 enabled) is probably your best bet. aMSN might work too, can't be bothered to check.
