Ok so I really need a Mac Pro

does anyone see a reason to upgrade the processor to 3.0 or 3.2? Heavy photoshop and batch image editing? With the new one coming out should I upgrade the processor now?

$800 for a 6% increase in power isn't much of a value. I wouldn't even waste the $800 on the 3.0.
8x2.8ghz is very fast already.

I picked up a Dell 2709WFP 27" Monitor to go with my Mac Pro for under £400 brand new

Don't waste your money on 3.0/3.2 just get 2.8 for the price vs performance increase it really isn't worth the money.
