I have an iMac (very old) that appears to have a dirty screen, which is really only noticeable when there is a uniform grey to white color--it's especially noticeable if the screen is just white. I've taken a photo and attached it here. You'll notice faint grey line-like smudges.

(I also have a 2008 iMac that doesn't have this problem).

Any idea what it might be or if it is fixable somehow? (I have taken the glass off and cleaned it, but that didn't change anything.)

Try cleaning it first.
You'll need 2 small suction cups at 2 crossed conners, or 1 big toilet plunger at the center of the glass to remove it from the LCD.
Gently wash the glass with disk soap and water, or if you want to add extra labour to the job, alcohol and microfiber cloth.
To clean the LCD, you can use a soft brush, or a dust-roller (the one you often use to remove small hairs and fiber off you trousers)

If the above doesn't help, then it's time to clean the inside of the LCD panel. This job is much harder and riskier, often done by repair shops.

Ok, thanks. I did clean the inside of the glass and the LCD when I installed a SSD--and that didn't fix the issue (it's only an issue if something pretty uniform is being displayed).

Do you know if any good instructions or walk-throughs for cleaning the inside of the LCD panel?
