I am going to trade in my 2018 iPad Pro 12.9 with Apple and get the $500 in savings. However, is it possible to just walk into the store (when the 2021’s are in stock), trade in my older iPad Pro on the spot, have it inspected at the store and have the savings deducted from my purchase price?

…or do they have to send off the device, thus, making you wait for a credit after you purchase?
 
They inspect it right away and put the credit on an Apple Gift Card. You can use the gift card on anything. Ibe traded a few items and prefer in-store because their online trade in partner tends to reject a lot of stuff.
 
That's pretty much how it works. Screenshot your trade-in quote though in case they try to give you less.

They will do it on the spot, but you don't actually have to do it in one transaction. You can also just trade-in later and they can put the money back directly to your credit card, doesn't have to be Apple Gift Card. If you do it online they will only send you Apple gift card.
 
I suggest you make an appointment online instead of just walking in. Many of the Apple Stores still require appointments for everything.
Yep ours here in Chicago still require an appointment. It’s pretty easy just look up “shop with a specialist”
