I have a AppleWatch 7 and am thinking of upgrading to a 10.

1. How much of a difference does on device Siri make? Is it more effective/efficient or just quicker once it actually understands a command?

2. Does double tap make much of a difference with using the watch or is it more of a gimmick? My main interest in using double tap with the watch is when I am going on walks, going on walks with the dogs and holding a leash, snowboarding (not when actually going down the mountain of course).

As I understand it, the on-device Siri is more about enabling some Siri functionality when then device is offline - e.g. your watch is not connected to your phone, wifi, or a cellular network. Since I keep a cell plan on my watch I'm not sure I'll see any difference. Double tap hasn't been that big a deal for me (S9) - it's handy for stopping a timer or answering a call while I'm prepping a meal and my hands have been in raw meat or similar - but I probably more often bring my wrist up and tap a button with my nose to be honest than use double tap since that's what I'd been doing before doubletap was introduced.
