I've just tried to enable iTunes to open automatically when I connect my iPod Touch or iPad to my iMac. In the past I've clicked the box under Devices/Summary/Options and it's worked, but now the box is greyed out and I can't click/select it. Why is it greyed out and why can't I?
 
launch Activity Monitor (in applications > utilities) and look for a process called iTunesHelper.

iTunesHelper or iTunes Helper, is a program from Apple that runs
in the background and monitors for the connection of any iPod or iPhone
to the computer

if that process is not present, try removing iTunes completely (click here and follow the instructions), then reinstall it using the standalone installer from here: http://www.apple.com/itunes/download/.

note reinstalling iTunes will not do anything to your media files, playlists, ratings, etc.
