When I try to open a picture file not using the default program I get about 25 different options to choose from. How do I delete all of the ones I don't want and change the default one?
 
File, Get Info. This will open up a box, one of the sub boxes will have an open with command. Use this to use another app to be opened and also set as default.
 
Change the defaults: Use the Info window (cmd-I), that has an Open With option.

As to those 25 options. Is that mostly Adobe droplets? If so look here.
