I'm trying to change how all the files of a certain type opens, but the "Change All" option for me in "Get Info" is grayed off. I don't think it was like this before.
 
Your LaunchServices.plist may have gotten corrupted at some point. Try removing com.apple.LaunchServices.plist from ~/Library/Preferences, restarting and then trying to set the default application.
