They target American interests at all levels, even down to hacking college students to gain access to research data.
In what way are the activities you mention not a subset of caring for their political hegemony? Industrial espionage, Apple car data, research data — these all equate directly to power, both economic and military.

That said, I have zero doubt Chinese (and every other) powers ensure that back doors are present. Those involved in sensitive communications should assume that they are at risk.
