I'm confused, I see people saying that the MBP can output in 5.1 but...where is the optical output? Does it require an adapter?

Yes you need a mini optical adapter that goes in the standard headphone socket.
 
Ah HAH! I knew it! Thanks man, these past few days I've been super impressed to find out how much my macbook pro can handle (Early 2008, don't know what model that makes it). I bought it back in late 2008 for video editing and was so impressed with its capabilities. Just recently, I installed bootcamp and ran windows to play some PC games. It handles new games extremely well like Bioshock, CS:S! And now finding out that it can do 5.1, HELL YEAH! These notebooks are AWESOME!!!
