I have a bunch of HD (1080) movies that I would like to put on my iPad. However, by default Handbrake and iTunes seem to downsize my glorious 1920x1080 video to around 1024x400 or 1024x500. I want to take up all the screen space possible by double tapping, and this means setting the resolution to the height of the screen rather than the length. In Handbrake, what is the best resolution to be encoding these videos?

You should keep its lowest resolution value at least on par with the lowest resolution value of the iPad 2 screen. Meaning at least 1024 x 768.
That way your video will not be stretched to fill out the screen

The above poster is correct. I assume you'll want to watch your movies in landscape view, and the height of the screen in landscape is 768 pixels. So you'll want the heigh value of your movie to be 768.

I don't know about the settings in handbrake, but if you can custom set the resolution, then you want your height to 768.
