I am new to OS X, coming from a Windows background.

In Windows, Java is historically terrible (a steaming pile of abject failure) at removing old versions (along with their known vulnerabilities and exploits) when updating to new versions.

What is the state of Java on OS X and how would I go about checking my late 2012 iMac to ensure that only the current up-to-date version of Java is installed?

    Thanks in advance.

The old versions (if you download the Oracle Java) are not deleted when you update. Soft links will keep references to the current version unless you force execution of an older one. If you know you aren't using an older version you can always delete it.
