You'll need to order it online, although I guess you could go onto the apple online store and order one from one of the computers they have on display, but I'm not sure of the point of that.

I was going to use the 18 month financing, but I have to apply for their card, thought I would just do it in store, while I got some questions answered.
 
You can order online for in store pickup. if you pick up instore then you pay that store's sales tax rate.

Don't you pay the sales tax even if it's sent to your house? Since they have a store in the same state?

Yes you will, I'm guessing this is just useful if you're from out of the country and don't have a shipping address, or you live near the border of a state with lower sales tax.
 
Can you go into an Apple store and order a refurb iMac?

Yes you can order in store. I had cash and didn't want to use a credit card. I went to the store and they put the cash on an Apple Store Card (not iTunes Card) and I was able to do everything at the store on their computer. I set it up to be delivered to the store for pickup. Didn't have any problems.
