Hi guys, just curious if any of you had this before? I ordered a 16" MacBook Pro and upgraded the RAM. Over the weekend I was informed it was "Preparing to Ship" but this morning it's back to "Processing Order". Is that normal? Should I be contacting them?

Maybe it failed a QA check so they are getting another system. I would not worry. It is on Apple to provide you a well working system that they will be warranting.
 
I wouldn't worry about it. Something probably went wrong near the end of production and they had to remedy the situation. I'm sure you'll get another notification letting you know all is well and the computer is on its way to you. No way Apple is going to let your hard-earned money slip out of their billion-dollar hands. No way! LOL.
 
It was dropped on the ground, and now will be sent to an Apple store as regular stock. :)
