Ordering an iPhone with in-store pickup: Is it reserved for you?

So I've been in AT&T pre-order limbo for a while, and I was wondering if I canceled my order and ordered a phone that was listed as in stock at a local Apple store if they hold it for you to pick-up and if so, how long.
