I'm trying to think of a reason why Apple WOULND'T want to or be able to make it possible to organize apps in iTunes. It just seams like such an easy and practical thing for them to do.

Is there any reason why they don't want to do this?

i would love the ability to organize the apps in itunes AND be able to organize them for my iphone in a fashion before i synch

the icon organizing system on teh iphone is among the worst of its features haha. although they supposedly fixed it a little where you can drag an icon over several pages without messing up the existing icons.

hopefully they will add itunes snyc-ability soon though.

They could do, in an iTunes update. However, it's pretty easy to do actually on the phone itself. the positions are backed up in your backups. Seeing as we haven't seen anything about iTunes yet (within Snow Leopard) and there is no mention about iTunes in the Snow Leopard page, it'll go either way - i'd imagine you won't see anything till Snow Leopard/iPod/Touch updates.
