Sadly iPod ones are protected, iTunes must need to send a token to the servers.

Accept it gives you a token ID, so all I need to do is force the token when iTunes goes live with it

Correct me if I'm wrong but can't you still download and upgrade for free now that we've confirmed that the GM is indeed what Apple is releasing as the 3.0 final. Not going to post a link but iPod versions of 3.0 are floating around with the rest of the GM IPSW files out there.

I downloaded but what file do I choose to restore to? None of them show up as valid iphone software files.
