Hi all

I have just got a new M3Pro MacBook Pro and I can turn on screen mirroring, but there does not seem to be any simple way of turning it off.

I can't believe that Apple made it that difficult to do so. Settings, Display, Select Display and then Disconnect

It seems such a long winded way of turning it off, when to turn it on, all you do is go to Mission Control and click Screen Mirroring

Am I missing something here, and is there a keyboard shortcut, or a simple way to turn it off

Command-F1 toggles screen mirroring on and off.
 
You can also turn it off in Control Center.

Nope, it switches between mirroring and second screen, but not off
You asked about turning off screen mirroring, and it does that. What are you actually trying to do? Turn off a secondary display altogether?

Perhaps I should have been a little clearer in my OP

If I use screen mirroring to my Apple TV, there is no way that I can find to simply turn off the mirroring from the MBP

Command-F1 switches between mirroring and a second desktop, but does not turn off mirroring and pressing the screen mirror button in Control Centre does nothing either

Ah yes, what you're doing is Airplay to the Apple TV, which is not the same even though Apple labels it as Screen Mirroring. To disconnect in control center all you need to do is to click on the blue circle inside the Screen Mirroring widget next to the name of the device where you're mirroring your screen.
