So if I want to run both I need to start with boot camp and I will need two licenses, which isn't a big deal since they are free through my work. Will I need to use antivirus software for windows? If so can I avoid this with parallels?

No, having anti-virus on Windows is still a good idea. I use the freebie from Microsoft...

I am not sure you will need two licenses. It may ask you to reactivate (it did not ask me) but its the same machine, so just call the number and tell them what you are doing, and they'll give you the code. But if you have free codes from work, then no sweat.
 
I used Windows 7 Lite to save space

I wanted a config where I could run parallels or vmware fusion for business apps alongside osx, but still have a bootcamp partition to reboot and play games. I found that Windows 7 Lite worked well for me. Many tutorials steer you to crack/steal Windows, which I obviously don't recommend, but the tutorial is still valid. I ended up with a 6GB partition for windows 7 and then when I install games, etc. I install them to an external drive at home.
