For a while now, Server has been a standalone App that runs on it's respective version of OS X. You will absolutely be able to use OS X "Server" as a standard OS X machine without it really impacting your usage too much, unless you're doing heavy workflow with the Server app. While installing "Server" does change the identifier of the OS to "OS X Yosemite Server" from just standard "OS X Yosemite," there is no reason why doing so should prevent your system from booting. What Mac were you using Server on that prevented it from booting?
