Outgoing mail server

Does anyone know how to change the outgoing mail server on the iPhone without changing it on my .mac? I synced my iPhone and it just copied all my preferences out of mail. Which is fine when I'm at home, but I use my iPhone elsewhere, and right now i can't send mail. I need the iPhone server to be .mac or something else that will work
