This somehow drives me crazy. I have various MS Office tools installed, including Outlook (latest v16.47). Everytime I close its main window and click the Outlook icon in the Dock, it will show up with a rather small size window so I have to resize it to see everything. When minimizing/restoring, the window size is unchanged.

I'm wondering if this is a particular Outlook/Office issue or does anyone see the very same issue with any other macOS version than Big Sur?
 
I'm familiar with this issue from my Windows days going back 20 years or so. Microsoft advised resizing using the bottom right corner of the Window to memorise the sizing, and standardized this for all their software which has worked well ever since. On switching to MAC OS, I automatically applied the same and it has worked for me without issue including on Outlook. I currently run the latest version of Big Sur on my 2017 MBP. Hope this helps.
 
I have exactly the same issue. Resizing using the right corner doesn't help unfortunately. The window always resets to 1024x768.
I tried using new Outlook interface version. There is no window size issue but it has another weird behavior with some of my mailboxes. When the main window is closed (running in the background) outlook doesn't display red badge count icon of new unread emails on the dock. The icon appears only when I reopen the app.
I'm on Big Sur 11.2.3, MS office 365 v.16.48 (mac app store).

I tried using new Outlook interface version. There is no window size issue but it has another weird behavior with some of my mailboxes.
Unfortunately I can't use the "New Outlook" option because it doesn't support Exchange accounts.
 
After one of the latest updates I've got the same issue. Don't bother with completely uninstalling and reinstalling Outlook or Office as a whole (including all support files). I found out the hard way it won't do anything to fix the issue.


PS Good news everyone! Yesterday's App Store update (version 16.48) addressed the resize bug.

PPS It's only a partial fix. Outlook only remembers the window size after quitting. When only closing the main window and clicking the Dock icon it resets to the default size.

This has been annoying me for ages. I tried all the above and it still goes back to the default (small) size.

The solutions that works for me are listed below:
  1. Completely quit Outlook by either;
    1. right clicking the Microsoft Outlook icon on the task bar at the bottom and selecting "Quit" or;
    2. using the menu bar at the top - "Outlook/Quit Outlook".
  2. Another method that does work is to minimize it by clicking the yellow button at the top left of the Outlook window instead of the red button. It will now come back up with the previously set size.
  • By using method 1. it completely closes Outlook and retains the last used size in memory. This method completely closes outlook so, you will not be notified of any new items. If you want to continue to get new item alerts then you need to keep Outlook running. Method 2. keeps Outlook running.
  • If you click the red close button in the top left of the Outlook window, it will close the window but it will still be running in the background. Next time you open Outlook, it will be at the default small size again.
Not the best solutions but they do work (for me anyway).
 
I downloaded Office installer from MS website (instead of Mac App Store version) and tried beta channel updates for Outlook. At least Outlook v16.50 from beta channel has no window resize issue. But I'm not yet sure if it is stable enough for daily usage. Anyway hopefully this will be fixed soon by future updates from current channel.
 
Today I installed the latest update via Homebrew (Outlook v16.49 (21050901)) and it finally restores the window in the size it had when closing the main window and clicking the Outlook icon in Dock. Looks like they have finally fixed it, even if their change log does not list that particular fix.
