Is there any way to mimic the envelope icon that Outlook gave when you have new mail in the tray on windows on a Mac? Ideally it would be in the upper right of the Menu Bar. I've tried some 3rd party apps like Mail+ for Outlook but all that really gives is quick access to my mail.

I just want a simple icon that changes or shows a count to let me know I have unread emails.
 
If you are referring to the Outlook Icon, you can go into preferences-->notifcations and sounds-->Badge Count. Badge Count should be enabled in one of two modes (no way to turn it off as far as I know) either for All Accounts, include all unread messages or For Accounts that Have Focused Inbox, include only focused messages. A 3rd option also appears to include delegate inboxes.

If you are not seeing the red message badge showing the count in the upper right of the icon, maybe try clearing the alerts and restarting?

Thanks for the idea, I'm looking for what I guess would be a secondary notification in the upper right corner of the menu bar. A simple icon that would show new mail.

I use auto-hide on the dock for more screen real estate and would love a discreet way to see new mail alerts.
 
No, there is no way to mimic the notification behavior of Outlook for Windows on macOS simply because macOS's notification system is completely different. The area in the upper right corner you are referring to is not a notification area, which is why it cannot work this way.

The notification area in macOS is that big ugly behemoth of a notification bar you get when you click on the symbol at the very top right on macOS. You can also have Outlook display a quick notification badge at the top right immediately below that upper right corner area either permanently or temporarily but that's as far as it goes.
