When you choose to erase all content and settings via the iPhone settings, how secure is this? Can data be easily recovered from the device after erase?

Is there software you can download that lets you overwrite the free space multiple times after a device erase to increase security?

The reason I ask is like many of you I sell my phone before I upgrade each year, and was just curious if my data can ever be recovered. It does contain sensitive information as I am a healthcare professional and I wanted to ensure my data is completely erased.
 
It basically purges the encryption keys so nothing can be recovered unless you really really wanted to and had enough money to do it.
