I'm surprised this isn't a bigger deal. Upgrading to PadOS15 essentially destroys your organized icons becuase they eliminated one row (horizontally) from each page. Additionally, using it portrait mode now looks really awkward.

Does anyone know how to change it back? I think it looks horrendous.
 
You can set the widget locations separately for landscape and portrait orientations

No, I don’t know of a way to add back the icon row. I was so fixated on how the widgets messed up my layout that I wasn’t paying attention.

It honestly surprises me how bad portrait mode looks TBH.
Yeah, they went from a 6x5 app grid from landscape or portrait on iPadOS 14 to a 6x4 app grid in landscape and 4x6 in portrait.

It’s baffling why Apple did it, I have a feeling it has to do with widgets.. trying to scale them properly.

Wait why dont i have iOS 15?
It’s for public beta.. you have to sign up for it.
