I need to fill in a form regularly and figured I could duplicate it in Pages and have it saved on my Mac and printed. Is there a way I can add "fill-in" text fields while leaving the rest untouched? I suppose it would also be a good idea to create it as a template so that I don't overwrite each past document (if I forget to do a "save as".
 
Does pages have a mail merge? (Use word so don't know about pages, but you can certainly do this in word).
As for overwriting, the best way is to protect the document so that you can't overwrite it - you will automatically be prompted to save as. (In word, this is under Tools, Protection - don't know about pages but I'm sure they will have something similar).
