Pages quandary - After changing margins, can't get back to font style?

I feel like I'm devolving, or Pages has devolved. I feel like I did this easily in the past.

I open a basic new document and paste my Notes composed text. The text starts out being a page and a half.

I need to adjust both the text fonts and margins to make it fit on 1 page, so first I need to reduce the margins, right?

At first the side bar is titled Text, with Body, Style and More tabs. I can easily select text and change fonts, but margins first?

I click on the top right toolbar icon and the side bar now shows Document, Section and Bookmarks tabs.

I adjust the margins under the Document tab, but I've wasted over an hour trying to figure out how to get back to Text?

I'd skip Pages entirely and do it using TextEdit.
