In word when I wanted the '-' character to be a dash ( ' – ' ) instead of a hyphen (shorter), I would put a space after a word, hit the dash key, put another space, and then continue typing. Pages doesnt seem to have this function. Will i need to do Option+ - everytime?

Also,

In word bulletted lists had alternating bullets.
How can I do that in pages?
 
In Pages > Preferences > Auto-Correction, check the box for Symbol & text substitution. At the bottom of the list, check the box for -- to be replaced with —. You do need to type a space after the -- for it to change.
