The current version of Pages is Pages '09. Aren't they due for an update? Is there a regular schedule for updating the iWork apps?

What's wrong with current version of iWork, apart from '09 label, that is? The apps work fine and Apple keeps incrementally updating them via the Mac App Store and OS X System Update.

If you're asking specifically about a total interface overhaul, I think it's unlikely to happen until all Mac products move to retina, which might allow Apple to do some interesting things with those apps' interfaces.

Nothing wrong with it, but my version of iWork is older (i.e. doesn't go fullscreen) and I didn't want to buy '09 if it was going to be updated soon.

The App Store version doesn't have a year version number. Pretty sure this means that the upgrades in the future are included if you were to buy now.
