Pair Series 5 to iOS 12 device?

I’m guessing the answer is no, but any chance I can pair a Series 5 watch running WatchOS 6 to an iPhone running iOS 12.4.1? Excited to receive the new watch tomorrow, but was hoping to avoid upgrading iOS until 13.1 drops on 9/24.
