With an App Store one would assume that apps like Pandora will be available. I know others have raised similar questions about apps like Plex, but for me no Pandora could be a deal breaker. Obviously, Pandora competes with Apple Music. Any insights or information about this?

You're probably right, but seeing that there is no Pandora app on the current Apple TV, it makes me wonder how protective they are going to be of competitive services. If they do have Pandora, I hope that it will integrate with Siri so that you can say; "Siri, play the Tom Petty station on Pandora." I can do that with my Amazon Echo and it's pretty cool. (Although I have to say "Alexa" instead of "Siri.")

Has anyone used the new Pandora app long enough to see if the screensaver kicks in after the desired period of time? Or does the Pandora app remain on screen?

Screensaver kicks in. Unlike Apple's music app, album covers and titles do not pop up with each new song, so you'll have to hit the menu button to back out if/when you hear a song where you're curious as to who the performer is.

The screensaver will still kick in. I used the Pandora app last night for a little bit while I was doing some work, and the flyover screensaver kicked on about 10 minutes in.
