I have mapped in the VM the Command key to the Windows key, but none of the keyboard shortcuts work in Windows, like Win + I to open Settings or Win + S to open Search, any help will be appreciated, thank you

In Parallels, the Command key is the Windows key by default, no mapping is necessary.
It works on my end for any Win + command and I have not remapped anything, I just installed Parallels, then Windows 11 Pro after. The only requirement is the Parallels/Windows windows has to be active.

Unfortunately, the default doesn't work for me either, It is very weird, because I remember it used to work many years ago, now I am using the M1 version and nothing happens

Historically, I have been a Mac user but I run GIS software in a Windows 10 VM quite a lot under Parallels 15. If I just tap the Command key, that opens the Windows Start Menu (is that what it's called?) however the shortcuts you mention - Win-S and Win-I don't work for me either. I am just using the default Parallels key mapping.

Not an issue for me, since I've never used those shortcuts. But, FWIW, your issue doesn't seem to be specific to Parallels 17, Windows 11 or the M1. I am using a 2018 Intel Mini with an extended Apple Magic Keyboard (space grey). Perhaps this has something to do with the type of keyboard?

If I press the Command key, it will open the new Start Menu in Windows 11, some keyboard shortcuts work, like:

Command + E = Opens Windows Explorer
Command + R = Opens the Run window

None of the other Keyboard Shortcuts listed here work:

I think it might be a bug with Windows 11 ARM version.

OK, did a quick test, some of those shortcuts do work for me - CMD-D does show the desktop, CMD-E does open Windows Explorer. But CMD-I doesn't do anything by itself, although it shows file properties if you have a file selected in Explorer. So, I guess Parallels automatically maps that to behave like CMD-I "get info" in MacOS.

So you may be right about Windows 11 ARM. But I will actually use CMD-D and CMD-E in the future, those are handy shortcuts that I didn't know - so thanks for that. :)
