How much RAM would I need to do this? If I upgraded beyond 8GB can I still use Bootcamp to boot into Windows or is it done once Parallels is installed? Thanks..

Parallels is 'just another app' on your Mac and has nothing to do with BootCamp. You can live in both words with zero issues. Parallels is just a desktop hypervisor app, much like Oracle's Virtual Box or VM Fusion or Workstation Pro.

Can't answer on the RAM aspect although I suspect you may be pushing your luck just a tad - I run 16GB and my Windows 10 instance can sometimes be a wee taxing.
