I'm planning to partition my 2012 MacBook Pro (bearing in mind I've not done this before). I've read that after Windows has installed you need to insert the OS X disk for it to configure. The problem is my Mac didn't come with an installation disk... what do I do?

I believe that Boot Camp Assistant will create a USB-based installer on 2012 systems.
