I'm still working this out so this reads like a train of thought..
Paying with the starbucks store card is better as you get 'offers' in passbook.
Now there is a second way to pay; Apple Pay which adds a layer of confusion for the masses. I haven't added my credit/debit card within the starbucks app to top up but you can't top up the starbucks app with Apple pay to then pay starbucks! It's all a bit confusing.
Why isn't there a way to just pay with Apple Pay an the information be filtered through to the starbucks app?
