I have redeemed quite a few credit card points to get Gift cards, along with saving up and buying gift cards for some purchase on the Vision Pro. I so far have around 2k in Gift cards and wondering if this will pose issues when ordering on Apple.com or in store for Vision Pro. Thoughts?

Bunch of threads here covering this, but the general gist is that you do not want to add any gift cards to your Apple ID account as there is a cap of $2,000 and can be difficult to apply to a purchase.
Can use up to eight gift cards for online and phone orders. Twenty cards at an Apple Store.
