PDF display problem 10.7.5

Certain downloaded PDF files created in Adobe Illustrator CS5.1 will not display in colour on OSX 10.7.5 mac mini. just black & white? They will display correctly however on iPhone and my old G5 power mac... is there a setting in OSX or preview that I need to change?

Many thanks for any suggestions.
