So I have a program that can take a PDF to Word so I can edit the document but I am curious is there a way to just edit PDF's (add a sentence or remove one) without having to hack the document or convert back to word?

There are a number of options out there, but I have typically used Adobe Illustrator to edit text in PDF files that I didn't have the original source document to.
Unless m$ has something new that I have yet to see, I don't think that word is going to do anything for you.
