Is there a reason why i can't select/copy text from a pdf in ibooks?

PDFs

PDFs don't allow you to do that on the iPad..I get the books that I want to highlight and copy & paste in EPUB format

pdf is kind of an after-thought for ibooks. If I remember correctly, the original version of ibooks didn't even let you read pdfs. Like other posters have said, if you want to work with pdf, get an app that is specifically geared towards that.
