I have a few hundred PDFs saved on my iMac, does anybody know of good software which can convert it to searchable text? Everything I've seen can only be used for when you initially scan a document, but I want to convert previously scanned docs.

I'm also looking for something which can organize the docs.
 
Most of the OCR software I have can work with an existing PDF: ABBYYY FineReader Express, Read Iris, and OCRTools all work on pdfs.

If you want an all in one tool that takes care of OCR and Organization, DEVONthink Pro Office is a great tool. At $150 it is not cheap, but if you are doing research or using it for business purposes, it can't be beat. It's among my favorite software. There is a 25% education discount if you qualify.
