I ordered a new iMac the other day with the following specs:

And here are the specs of my current PC

I use my computer for photo editing in Photoshop and some rather light video editing along with general web browsing and word processing. Oh and Minecraft.

So, I would like to know, how much of a performance decrease will I get/notice if any? I prefer Mac OS X over Windows but is this a bad move?

Not if you prefer OS X over Windows. In terms of hardware, I can't imagine you'll see much difference either way. The real "upgrade" you made was with the software.

Keep in mind that your new Sandy Bridge processor can turbo boost to 3.7ghz.

I have the same iMac and it's fast as heck. I absolutely love it.
