Great, very good how other cultures do "nose to tail" consumption of meat and animal products generally. I quite like tripe if well-prepared. Never had tendon, on purpose anyway.Feeling dim sum depraved. Some colours and textures -- close look at a dim sum serving of beef stomach (tripe) & tendon w/Chu Hou sauce -- very flavourful and tasty.
