Hello. I will primarily be using the MP for heavy duty post processing of RAW file photos (15mb each, many of them). The main programs I'll be using are Photoshop CS3, NIkon Capture NX, and potentially, Aperture 2.

Is having two chips overkill/unnecessary? how well with teh software i plan to use actually be able to utilize all eight cores? will having "just" four as opposed to 8 make much of a difference for my needs?

I do plan to get it with the 8800 and also add 2gb ram aftermarket.

Thank you in advance.

Aperture will utilise all the cores if you are processing multiple images at once. This occurs particularly during import and export functions, but can also happen if you lift and stamp adjustments to a large set of images at once.
