Is there an app that will allow you to do everything that Photo does and allow you to sort the photos into folders/categories/Albums?

Picture Safe by Collect 3. It's 'sister' app Video safe does the same thing, but adds video funtionality and sorting too.
Both apps mimic the default Photo app, in terms of viewing, swiping, tapping, pinching, has wi-fi and ftp transfer too, as well as sorting into folders.
If there's a better app for this purpose, I've yet to see it.

Curious... on Picture/Video Safe, if you have taken pictures directly from the app itself, once you sync... can you pull them off the iPhone and dump them to your computer just like you would normally do with the Photo Album?
No. But you can connect wirelessly through a web browser and download the files that way.
