Being able to remote into the mini using the iPad is a good point. I was doing that most of the time until I got the M1. Now, I use the M1 most of the time to remote into my headless mini.
Just out of curiosity.....when you say you "remote" into your headless Mac mini.....was that through the screen sharing option or do you use some sort of software instead?
This question can goto anyone else that "remotes" to another computer.

MacBook Air is my vote....goes where you need if work style changes in the future.

Air would’ve earned my vote if it had two more ports. I just hate the sight of dongles dangling out on my desk.

I would say Mac Mini based on what you already have, it will be a more stable option for several years, whilst the MBA in it's current form will see changes soon.

I have used the built in screen sharing option before. I prefer using the app JumpDesktop. It is very quick, fluid, and is much better for viewing than screen sharing, in my opinion.

I have used TeamViewer as well (which is free) but found t to be very clunky and I didn't like the GUI setup.
