iPhone 12 mini Picks up incoming calls.

For some reason my phone automatically answers incoming calls, even if it's just lying on the table.

I've looked through the settings but can find nothing about this.

I do not want this, anybody know how to turn it off so I have to accept incoming calls (or reject).

Look at Settings->Accessibility->Touch->Call Audio Routing->Auto-Answer Calls. Make sure it is Off.

^^^isn't that dependent on your service provider? They operate the answerphone service, not your iPhone.

There is no way I know of to change the number of rings. What I do is just press the button to decline the call and it goes to voice mail.
