iOS Playing audio to headset while recording?

I've been trying to modify the SpeakHere example to play the audio it's capturing on the mic to a headset. It turns out if you plug a standard (no mic) headset into an iPhone, the external mic remains enabled.

I know other apps do this and modify the recorded buffer. Has anyone done this?
