I have a 6 Plus shipping as of yesterday which will arrive next thursday. If it matters, I also have a jailbroken 5s on iOS 7. The 6 Plus will probably have 8.0 out of the box and I want to get it jailbroken with 8.1. The problem is that 8.1.1 may drop any time now

Is there anything I can/need to do to ensure that I'll be able to jailbreak the 6 Plus?

Not sure whether you can go out and install 8.1 after 8.1.1 is out but i seriously doubt that you could. In that case, your best bet would be to either wait it out till Pangu finds another way around 8.1.1 or JB 8.0 and wait it out until its safe to upgrade. I think the second option is quite obviously the best option if you do indeed want to start off with a JB and you could always go and upgrade to 8.1.1 if you have any issues. Other then that, there really isn't much to do. with 1.1.2 Pangu, is really easy to install through VM or a PC.

Only thing you can do is hope 8.1.1 is not released by next Thursday.

What if I restore from a backup of a jailbroken device? Will the new device gain jailbreak?

What about SSH blobs and stuff?

Is there anything I can do short of settling for 8.0 and waiting things out?

Backups don't store iOS. They store your data.

SHSH blobs have not been relevant since iOS 5.

Not true. They haven't been relevant since iPhone 4S

OK. I was basing my comment mainly on the fact that iOS 6 blobs are more or less worthless because they aren't complete. Saurik didn't catch the change Apple made.

But if they weren't relevant since before iOS 5 either, then I stand corrected.

Sorry if I was unclear - they have been relevant up to iOS 7. Its based on the device (iPhone 3GS and 4) that can use them to downgrade. If you have the correct blobs (cydia is not the only place you could get them) then you could downgrade

No, you're right in regards to the 3GS and the 4 as those iPhones take advantage of a baseband exploit (IIRC) that the 4s and above can't.

As the ratio of 3GS/4 owners tends to decline though I made my comment with that in mind. Guess I should be more specific in the future.

My understanding now though is that of iOS 7 Apple no longer uses blobs, so they would not be useable even for iPhone 4 owners. Do I have that wrong?

You do indeed have it wrong. Since the bootrom of and A5 and A6 devices was shipped only understanding blobs, so they still have to issue a blob to the first boot loader to enforce the APticket protocol. Blobs don't have anything to do with the iOS, just the device
