I have a 2018 Mac Mini. I also have a 7 year old 27" Asus PB278 monitor running at 2560 × 1440.

I am wondering if I can just use an HDMI cable to connect it, or if I should be using a DisplayPort cable or adapter. Would there be any real world differences that would benefit me?
 
No difference, either should be fine. I’d still go for DisplayPort but that’s just my personal preference.

So since I am running 1440p, any HDMI cable that is capable of 4K will be fine for me, correct?
 
OP:

If you're going to use HDMI (Mini) to HDMI (display), I'd suggest a "high-speed, HDMI 2.0" cable.

If you use the displayport port on the display, then you need USBc (Mini) to displayport (display).

BE AWARE that if one connection scheme doesn't work as you expect, switching to another just might resolve the problem. It's one of the quirks of the Mini...
 
I see no reason to consume one of the Thunderbolt ports for a DisplayPort adapter. Use HDMI, this is why Apple added that port to the Mini.
